It's amazing the lengths I'll go to to avoid a trip to the supermarket when I'm busy and can't spare the time. Today's "rummage through the pantry until I find something that will pass for dinner" adventure resulted in this yummy onion soup:



One thing we had in abundance was onions. Onion soup was a no-brainer. I rummaged through our early '60s McCall's cookbook and found a French onion soup recipe, to which I added a lot of garlic and cayenne pepper, and I substituted chicken broth for beef, since that was what we had. The "French bread" with cheese on top is just from our normal bread loaf, toasted, with the cheese melted in the microwave. It was great! This recipe is really easy (except for the tears shed while chopping onions) and a definite keeper.
