Friday night happy hour at the Velveteen Lounge is a beautiful thing and we're always sad when we have to miss it. Well, not only did we have it this week, but it was warm enough to be in the Velvetiki Room!

Our menu featured mixed nuts roasted with rosemary and sriracha sauce, pesto eggs and focaccia bread with homemade red pepper and onion salsa. These dishes were chosen NOT for their foufy sounding names, but because we had the ingredients on hand. Focaccia is really easy when you let the bread maker do most of the work and the salsa (the entire recipe for which was a whim) was the result of having an aging red pepper and an onion available for use. We were both craving nuts, so I bought some fancy mixed nuts, tossed them with rosemary, sriracha sauce and a little olive oil and they came out great! I don't know why it is, but the best dishes often come about through trial and error and lots of experimentation. Luckily for me I like to experiment!
