
I really enjoy the creativity of cooking and the feeling of accomplishment I get when I figure out how to put together a delicious meal from an egg, some noodles and a flat can of beer. However, sometimes it's nice to find a recipe so easy you could assemble it in your sleep, without turning on oven or stove. In that spirit, I give you Polynesian Sunshine Pie:

For some reason I was cruising the Dole website this week and saw that they had a section for recipes. I can never resist recipes. I took a look and found this little winner, which is full of canned fruit and one banana, plus cream cheese, whipped cream, apricot preserves and a few other flavorings. They called for a graham cracker crust, but I made a coconut crust (since I had coconut onhand--nothing against graham cracker crusts), lined the bottom with fruit, beat together the cream cheese, whipped cream, preserves, vanilla and a little juice, poured it into the crust and let it firm up in the fridge. Nothing to it, but it's really good!
