This was one of those busy weeks, where preparing food feels like an unholy chore. The good news is that forces me to be creative, in order to get food on the table with the least effort possible. In that spirit, one of the tidbits featured for our happy hour Friday night happy hour this week was bruchetta:



We also had oysters and a zucchini appetizer, the recipe for which I'm still tweaking, but bruchetta is great, because it's really, really easy, yet feels sort of fussy. You toast slices of baguette and top with some combination of tomato, garlic, basil and whatever else you feel like adding. The recipe I have doesn't even call for any cooking, but I heated it up, since neither of us is wild about cold tomatoes or raw garlic. It was yummy and took less than five minutes--my kind of appetizer!
