
Last Tuesday was Paul's birthday, so I made one of his favorites, carrot cake!

I'd never attempted a carrot cake before, but I'm pleased to say it turned out to be fabulous! The recipe I used called for crushed pineapple and dried cranberries, which added dimension, and the cream cheese frosting is fantastic. I could just eat the frosting! Most of all, I'm just glad it made his birthday even happier.
