I'm in an experimental mood these days and this week I decided to attempt a "healthy" version of the Hawaiian favorite, Loco Moco:

Traditionally, Loco Moco is a burger patty on a bed of rice, with a fried egg and gravy on top, so I stuck with those components, but I steamed brown rice for the bed, topped it with a grilled turkey burger, to which I'd added garlic and spices, added the fried egg, then smothered it in a veggie gravy I made. It was yummy, felt sufficiently decadent and didn't make me feel like I'd just eaten my body weight, so I'd call that a success!
