
This was a big cooking week, culminating with all of the cooking I did for the next "Velveteen Lounge Kitsch-en" episode. However, I just had to share this dish, since I was so proud of it:

I call it "Mextalian Casserole" and it came about because I was having a day when I would rather have died than gone to the supermarket, so I was forced to be creative with whatever we had on hand. I made rice in a broth of water, orange juice, dry vermouth, sriracha sauce and spices, which I combined with some leftover homemade chili and black beans. I topped that with salsa and cheese and microwaved it until the cheese melted. It came out really well, so I was pleased!
