
This is my second foray into the world of homemade cocktail bitters, Pineapple Bitters:

You only use a few drops of bitters in a cocktail, but they really do make a huge difference in a drink. You can, of course, buy them commercially, in a variety of flavors, although I've never seen pineapple before and wanted to try it. I took a basic bitters recipe, added pineapple and pineapple juice and cut back on the sugar. I'm really pleased with the final outcome! They definitely have the desired bitter flavor, but with a nice nuance of fruit. I'll have to try another flavor soon!
