
I boiled eggs for deviled eggs for happy hour, but decided I wanted to do something different, so I made this curried egg salad to serve on top of crackers:

I'm pleased to say it came out really well! I was on an Indian food kick this week, having made Tofu Tikka Masala, which was a big hit and super easy. I go through phases with different cuisines. We had amazing Mexican food at our friends Pat and Dave's party on Saturday night and we're heading to Cancun on Thursday, so I think Mexican food will be on deck for the next couple of weeks. After that we'll be headed into tiki season, so Polynesian can't be far behind!
