Friday night's happy hour featured what is among the top three or so easiest finger foods ever, what I've lovingly dubbed Poor Man's Brie:



Okay, so there's nothing really brie-like about it, other than the fact that the cheese is softened, but it's a fun take on that idea. All you do is take a brick of cream cheese, soften it in the microwave for 20 or 30 seconds (depending on how hyper your microwave is), then top with either apricot or peach preserves to which you've added some chopped jalapeno pepper (I also added salt). Nuke that for 15 seconds or so, pour over the cream cheese and you've got a spread that looks and tastes special, but only took a minute to prepare! Thanks to Betty Crocker for the idea!
