
I wanted to make something different and fun for Friday's happy hour, so I tried my hand at bacon wrapped dates:

I'd made faux rumaki before, which is really easy, but I'm thinking these might be even easier and they're so good. I took my inspiration from a Betty Crocker recipe, starting with cutting bacon slices in half, sprinkling them with basil, and slicing slits in the dates, which I stuffed with pistachios. I rolled the dates in the bacon and baked at 425 degrees for about 20 minutes. These will definitely appear at future parties, since we loved them!
