
It's been miserably cold here lately, which always puts me in the mood to cook. Saturday I made cheesecake and this vegetable beef soup!

I tend not to use recipes for things like soups, preferring instead to wing it. I browned the beef with salt and pepper, then added onions, carrots, celery, a lot of fresh garlic and spices, and let it simmer for 90 minutes or so, throwing in a couple of handfuls of rice toward the end. It really hit the spot on a cold evening and gets better the longer it sits in the fridge!
