
A while back I made a pumpkin cheesecake, which I called "stupidly easy." Well, I found a recipe that's even easier than that!

Truthfully, the mixing and baking of the ingredients was about on the same level of stupid ease as the previous recipe, but that one called for topping. This recipe suggested topping with caramel sauce, but we had some whipping cream in the fridge, so I whipped some up with a little Benedictine, just to make it even more decadent, and topped it with that. So easy a child could do it. A child that can't cook, I mean!
