Friday night happy hour at the Lounge this past week featured two new appetizers of which I'm very proud, since they are my own creations!



I'd made spinach bread earlier in the week and had some of the spinach/ricotta/onion/garlic filling left over, so I combined it with some biscuit mix, spices and a splash of milk, rolled it up into balls and stuck it in the oven for 10 minutes. Voila--spinach balls! The golden tidbits were made from a butternut squash, which I chopped, cooked and mashed. I added two chopped jalapeno peppers, spices, a beaten egg and just enough biscuit mix to hold it all together, then dropped it by spoonfuls onto a cookie sheet and baked it at 450 degrees for 10 minutes. I think they may be one of my favorite original recipes. They're good on their own OR dipped in a little salsa. I love making good stuff out of leftovers!
