Friday night happy hours are a sacred tradition here at the Lounge, but we've been gone practically every Friday night this summer, it seems. This past Friday was it for a while and we can stay put for a few weeks. In the meantime, I made us a special Thursday night happy hour:



Money was tight, but that forced me to get creative and use ingredients we already had on hand. We had lots of eggs, so I made curried deviled eggs, and there was cheese, so I made bite-sized biscuit-like things with cheese, onion and garlic. Those were good, but I think my best inspiration was my stuffed jalapenos. We have a super-productive jalapeno plant this year, so I cut off a few of the biggest ones and made a stuffing out of bread, onion, garlic, raisins, salt and pepper, cayenne pepper, honey and wine. I baked them for 10 minutes, along with the cheese biscuits, and they came out great!
