
Losing power meant that our happy hour food was slightly different than originally planned, but it led to some kitsch-en creativity!

I'd hard boiled the eggs for the curried deviled eggs before we lost power, so those weren't a challenge, but my original plans for the rest of our food were foiled, so I needed to come up with some alternatives. I'd already decided that we'd fondue if power wasn't restored by the time we were ready to eat, but it came back on just in the nick of time, so I made this nacho cheesy spread in the microwave in about two minutes and sliced some corn tortillas into strips and fried them up in oil and pepper flakes, for dipping. I also toasted some bread, just to have dipping choices. The whole thing took about five minutes. Isn't it nice to know that yummy appetizers are always available, using ingredients you have on hand and in just a few minutes?
