I'm still making cupcakes this week, only these are from scratch and not a mix. Behold, Mai Tai Cupcakes:



I'm still fiddling with the recipe for these, but I used rum instead of vanilla and a little lime zest in the cake mix and I used rum, lime juice and a little almond extract in the frosting. I'll do a little tweaking of the recipe here and there, but they're good and cheap to make. I think people enjoyed them at the gathering we took them to. Having the oven on made our kitchen really hot, but what's a little heat when you're making tasty desserts?
