
Thank heavens for convenience foods. It's another Friday night happy hour at the Velveteen Lounge!

Last week was crazy. It started off well, but quickly descended into several different kinds of hell and I was in no mood to make anything elaborate for happy hour. That was okay, because I had Jiffy biscuit mix, salsa, a can of SPAM and a can of pineapple chunks. I browned the cubed SPAM and pineapple chunks with some soy sauce, pineapple juice and sriracha sauce and I made the quick bread balls I often make with the biscuit mix, milk, chili powder, cayenne pepper, garlic powder and shredded cheese. Ten minutes in the oven, dunk them in some salsa and you have a perfectly respectable homemade appetizer with very little effort. Thankfully.
