Pictured below is a time-honored classic I like to call Old Vegetable Soup:



No, I don't call it Old Vegetable Soup because it's made from a classic recipe. I call it that because it's made from old vegetables. Any produce in the fridge that seemed to be pushing its expiration date was thrown into the pot, along with some spices and water. This batch had carrots, celery, green pepper and onions and I added some spinach at the very end. I'm feeling very virtuous that nothing got wasted and now we have A LOT of soup.
