
Sometimes happy hour wants dessert and when it does you want them to be bite-sized and adorable. In that spirit I give you Mini Cheesecakes:

They may look like poached eggs in this photo, but that's because of the pineapple sauce I made to top the cheesecakes. The cheesecakes themselves were dead easy: a crushed up vanilla wafer crust, topped with cream cheese, sugar, an egg and some vanilla that had been whipped together. Fifteen minutes in the oven was all they needed. The pineapple sauce is pineapple juice, sugar and corn starch, which I brought to a boil. It thickened and, voila, syrup! You could, of course, purchase sauce or pie filling, if you don't want to make sauce yourself. We have lots of both left. Too bad we're not having a party this weekend!
